They're wild, abundant in British waters, and when freshly prepared are a delicacy to rival lobster. But wrestling a crab can be tricky business if it’s your first time so that’s why we’re here to lend a helping hand… or claw. 

 

By drawing on the knowledge of your experienced teacher, you will learn how to source, prepare and cook native crab and how the different types of crab meat can influence the flavours of your dishes. With a heavy focus on practical skills, you will be in the kitchen most of the day and guided with step-by-step demonstrations from your teacher, trialing recipes and techniques that earn you the title of Crab Master.

  • What is sustainable?
  • Anatomy of crab and crab picking
  • Boiling, frying and cooking temperatures 
  • Reducing wastage with advice on stocks, sauces and soups
  • Cooking techniques

  • Presentation of dishes

  • Crab Cakes served with dipping mayo
